Enchiladas for the Holidays!
Today is a day just like any other out here in the New Mexico hinterland. There were big-eared rabbits eating breakfast (nibbling spare tufts of grass). A chickadee or two in the junipers. Pink light on the distant mesas. No snow yet on the mountains.
Thanksgiving is almost upon us. But our nest remains empty this year. There will be pumpkin pie for two. You can bet on it. And rumor has it there may be turkey and sweet potatoes nestled into tortillas- a surprisingly tasty combo. For those of you shunning any bird at all- I've got these beautiful vegetarian enchiladas to try- with sweet potato and black beans- my favorite recipe.
